Soul Food on China


In the African-American community, weddings are a time of great exuberance and joy. How we celebrate is indicative of our culture, our families and our past. And for most of us, that means food… and lots of it! For people who share an African heritage, good food goes hand in hand with wonderful occasions. Our ancestors knew that when there was an event to celebrate, the women would pull together and use their formidable culinary talents to create a meal fit for kings. We now take that knowledge and expand it into this special event… the wedding reception.

For some of you, the idea of "soul food" fits right into your scheme of things. Imagine a meal of your grandmother's golden fried chicken, fresh tender greens from the garden, incredible sweet potato pudding and smooth buttery biscuits to top it off! But at the same time, you want to have the elegance and tradition of a formal dinner, complete with beautiful china, crystal and elegant linens. Can you have it all? Of course! It's just a matter of combining both elements to create a total culinary experience.

For starters, think about the theme you've chosen for your wedding. If it's Afrocentric in nature, then having "soul food" for your reception meal may be a great partner to the general mix. If you are having a more Westernized event, then the addition of this cuisine can be a welcome change from the "ordinary" type of meal most people are accustomed to having at a reception.

Next, sit down with your partner and discuss the foods that you grew up with, the things that made your mouth water whenever you thought about them. Chances are, your guests will enjoy them too! Put your ideas on a list to discuss with your caterer or whomever will be preparing your meal. Remember that you won't be able to please everyone, so have a bit of flexibility in your menu. There are many people who are vegetarian or who are following low-fat/low-salt diets, so you need to be mindful of those situations. Soul food cooking has now taken on the face of more healthy ingredients and preparation, so you can still have the wonderful tastes you are used to without the high levels of fat and sodium.

For a daytime reception, think light and airy. Smoother fabrics for the linen, simple china and silverware along with an understated centerpiece should make a wonderful statement. If you are hosting an evening wedding celebration, a more opulent look is the key. Sheer organzas, elegant velvets and tasteful brocades lead the way for linens that speak refined beauty. Intricate centerpieces and the finest of china and silver will complement your well-dressed tables. Consider having menus created for the dining tables, so your guests can get an advance notice of the delicious fare they are about to enjoy!

And for your dining pleasure, consider this menu to whet your guests' appetites (and yours!) for the "foods from the soul":

Southern Fried Chicken
Glazed Country Ham
Spicy Catfish Fillets
Seasoned Mixed Greens
Baked Macaroni and Cheese
Candied Sweet Potatoes

This is exactly what FH wants for the reception but I was not trying to go there. He will be glad to see that it is acceptable expecially in the AA community. As a wedding singer, he's seen the traditional baked chicken and salmon dishes and doesn't care for them. So now I will talk to the caterer and see if they can offer almost exactly the same menu. I will also have to send this article to my MOH who said that a bride or her guests shouldn't be running around with a chicken bone in her hand. Can you tell me where you got the article. I'd like to send her the site. :yup:

That's exactly what we're having! We aren't the baked alaska and quiche type. We want a family gathering, a royal feast.

We are having the same foods, but with a Caribbean flair! Our reception site even let us take it there by offering "Chicken and Waffles," for that real authentic Southern brunch cuisine :hungry: !

Our menu was:

Oxtails (sorry Tiff :brow: )
Macaroni & cheese
Fried Catfish fillets
Baked Flounder
Rice and Peas
Candied Yams
Yeast Rolls (my mama's bisquits)
Collard Greens
Green Beans

Pepsi (I couldn't help myself)
And Lime Iced Tea

It was all catered by the neighborhood soul food joint (and that's what we call it too). Some onlookers were like :headscrat and made me feel (initially) like I was having a ghetto fabulous wedding, but traditional catered food really isn't my thing. We eat out a few times during the week for convenience sake but we both prefer home cooking.

This article puts a new twist on things :)

See , I knew this info would help someone. It just goes to show you how we are always in style wether we want to be or not. I guess it just comes naturally. If I find anymore info I will be sure to post it. :martini: :grouphug:

MY COUSIN IS A CATER AND SHE IS DOING IT FOR A VERY GOOD PRICE. WE CANT BEAT IT.I WOULD HATE TO SPEND MY MONEY AND NOBODY AT THAT YOU KNOW WEDDING FOOD.

I would love to have that menu at my wedding! I am originally from the South and the last wedding I went to (my friend's) we all got together and cooked her meal. Everybody loved it!!!!! I can't wait to show this article to a couple of people!!!

Our menu is

Chef carved Ham and Roast Beef
New Orleans Chicken
Shrimp Creole
Texas Meatballs
Buttered Rice
Toss Salad
Green Beans
Rolls w/ butter
Fresh Fruit
And now Daryl has added Chitterlings to the menu :headscrat

I don't think it fits in, but oh well.

I had a very traditional and southern menu and it went over well! People were raving about how the food was out of this world. We even gave out to go boxes! My mom prepared everything, our menu was:

Baked chicken w/dressing
Roast Beef
Ham
BBQ shredded pork
green beans
potato salad
rice w/chicken gravy
macaroni and cheese
rolls

With Lemonade that we made green to match my wedding colors. I am glad we decided to go this route!

Our brunch menu was a hit! People are STILL raving about the food! We had so much food left over that we took it home back to our place and had a wedding "after-party!" We invited folks over to come and eat some MORE and take the rest home with them because we were leaving for a 7-day cruise the very next day and didn't want the food to go bad sitting in our fridge uneaten. Here's our menu:

FRIED CHICKEN
WAFFLES
CINNAMON FRENCH TOAST
STEAK AND EGGS
HAM WITH FIG CHUTNEY
JERK TURKEY (the chef jerked the WHOLE bird!!!) W/ GRAVY
MACARONI PIE (traditional Trinidadian-style mac&cheese)
COLLARD GREENS
CANDIED YAMS
ITALIAN VEGETABLE FRITTATA
EGGS COOKED TO ORDER
POTATO SALAD
MESCULUN GARDEN SALAD

my hubby and i are still debating about our menu because he is from the south and he wants all of his favorites but i tried to explain that even though this is our day we still need toadjust to our guests. So far this is what we are planning to have:
chicken fried and baked;ham;italian beef;meatballs;shrimp cocktail;cabbage rolls;dirty rice;mac salad;potato salad;tri-color pasta salad;garden salad;corn succotash;green beans w/white potatoes;deviled eggs;fruit bowl
